| Ingredients |
|
1 large can pumpkin (3 cups)
3 eggs
1 cup sugar
3 tsp. cinnamon
dash nutmeg
1 (13 oz) can evaporated milk
1 box of white or yellow cake mix
3/4 cup margarine

| Instructions |
|
|
Mix first 6 ingredients together and pour into greased cake pan (9 x 13).
Sprinkle dry cake mix over pumpkin. Melt margarine and pour over cake
mix. Bake for 1 hour a 350 degrees.
TO SERVE: Serve warm, cut cake and turn upside down on plate. Top with
whipped topping.

EVENING STAR FARM BLACKBERRY DUMPLING COBBLER (Submitted by: Donna Slone)

| Ingredients |
|
|
Berry Filling
2 quarts of fresh blackberries
2 to 3 cups of sugar (to taste)
3 Tbs. cornstarch
Batter Topping
1 cup all-purpose flour
1 cup sugar
1 tsp. baking powder
½ tsp. salt
4 tbsp. softened butter
2 eggs, slightly beaten

| Instructions |

Mix the above ingredients and cook and stir over medium heat until
mixture begins to thicken. Spray a 13 " X 9 " baking dish with Pam and
pour berry mixture into dish. On the top of the berry mixture, drop by
spoonfuls the batter topping, below. Bake at 400 degrees until topping
is golden brown (usually 30 to 45 minutes). Serve hot or cool.

PEACH OR APPLE GOO (submitted by Liz Kuster)

|
4 or 5 fresh peaches or apples
1 cup flour
1 cup sugar
1/2 cup butter
1/4 teaspoon cinnamon
1/4 teaspoon nutmeg
|

| Instructions |
|
|
Peel and slice fruit and place in buttered 9x9x1 pan.
Combine flour and sugar.
Crumble butter into flour and sugar mixture put on top of fruit.
Sprinkle cinnamon and nutmeg over the top.
Bake at 350 for about 45 minutes our until toping is crisp.
Serve with Ice Cream.

JAM CAKE (submitted by Mary McFarland)

| Ingredients |
|
1 cup butter
2 cups sugar
4 eggs
1 cup buttermilk
3 1/2 cups flour
1 tablespoon baking soda
1 tablespoon cinnamon
1 teaspoon allspice
1 tablespoon vanilla
1 pint blackberry jam

| Instructions |
|
|
Cream butter and
sugar together in a large bowl. Add eggs to butter
and sugar mixture. Mix soda in buttermilk the add to butter an
sugar mixture. Mix together well. Gradually add other ingredients.
Mixing each with a spoon. Pour batter into an Angel food cake pan and bake
at 300 degrees until cake tests done, about 1 hour and 15 minutes or
longer if needed. When cake is done remove from oven, but leave in pan.
Pour Buttermilk icing over the cake.
Buttermilk Icing
1 cup sugar
1/4 cup butter
1/2 teaspoon baking soda
1/2 cup buttermilk
3 teaspoon white syrup
1 teaspoon vanilla
While cake is baking, bring icing to a low simmer. Let simmer
while cake is baking. When cake is done, using a wooden spoon handle, poke
holes in cake and pour icing over cake. Let cake set overnight in angel same
pan.
To remove cake from pan, warm bottom of pan slightly. Invert cake onto
plate.

GRAM HAMILTON'S BLUEBERRY BUCKLE

| Ingredients |
|
2 cups fresh blueberries (washed & stemmed)
2 cups sifted flour (plain)
2 teaspoon baking powder
1/4 teaspoon salt
1/4 cup butter, softened (1/2 stick)
3/4 cup granulated sugar
1 egg, beaten
1/4 teaspoon vanilla
1/2 cup milk

In a mixing bowl sift together flour, baking powder, and salt. Set
aside. In a separate bowl cream butter and sugar. Blend in beaten egg,
vanilla and milk. Stir dry
ingredients into liquid until well blended. Fold in berries. Pour
batter into greased, floured 9 x
9-inch baking pan. Sprinkle with TOPPING and drizzle with butter.
Bake in preheated 375 degree oven 35 minutes.
TOPPING
1/2 cup sugar
1/3 cup flour
1/2 teaspoon cinnamon
1/2 stick butter, melted

Apple Puff Pancake |

| Ingredients |
|
3 Eggs
3/4 Cup Flour
3/4 Cup Milk
1/2 Teaspoon Salt
3 Tablespoons Butter
2 Tablespoon Sugar
1/4 Teaspoon Cinnamon
1 Apple

| Instructions |
|
- Preheat oven to 400 degrees - 12 inch iron skillet
- Butter skillet and coat all sides.
- In a small bowl mix sugar and cinnamon, and then toss apple
slices and arrange in the bottom of the skillet.
- Pour the remaining
ingredients, forming the batter over the apples.
- Bake 25 minutes.
- Serves with butter and warm maple syrup.
